The combination of pimento and the small amount of curry powder results in a tasty filling, not a curry-flavored one.

Creamy Pot Pie

Chop the onion. Rinse, drain, and chop the pimento. Cube the cooked chicken or turkey. Sift and mix the flour and curry powder.

Melt butter in a 1-1/2-quart saucepan; gently fry onion until softened.

Stir in flour and curry powder. Cook, stirring constantly, until bubbly. Add broth, cream, and salt. Cook, stirring constantly, until sauce thickens and bubbles. Add chicken, pimento, and any cilantro, and heat until bubbly. Pour this mixture into a 40-fl.oz. stainless steel casserole. If necessary, thin mixture with water before pouring.

Heat oven to 450 degrees F. Place pan or piece of aluminum foil on lower rack to catch any drips.

Make biscuit dough from Cream Biscuits recipe, starting with 1 cup flour. Roll out dough to fit on top of creamed chicken in casserole. Place dough on top and prick with fork. Bake in hot oven for 15 minutes, or until golden with sauce bubbling around edge of dish.

There are times when we are more likely to have fresh red pepper in the fridge, than a small jar of pimento in the cupboard. Below is an alternative version.
