Yellow Couscous

Trim and slice the green onions.

Heat oil in a saucepan, and gently cook the onion until soft, about 4 minutes.

Add water, bouillon crystals, saffron or annatto, and salt. If using saffron, warm the liquid mixture and steep for 5 to 10 minutes.

Bring all to a boil. Stir in couscous and cover. Remove from heat and let stand 5 minutes.

Fluff couscous lightly before serving.
