Toasted Nuts

Heat oven to 350 degrees F.

Spread whatever nuts you are toasting out on a cookie sheet with a rim, or a shallow pan. Put nuts into oven for about 10 minutes for almonds, or 8 minutes for pine nuts.

The best way to tell the nuts are done is to rely on your nose. In the case of almonds, they are done when they start to lose their eggy odor. Be very careful with pine nuts; they burn more easily than almonds. Remove nuts from oven when they are just golden; they continue to cook some as they cool.

Put cookie sheet on cooling rack for a few hours, until the nuts reach room temperature.

Scoop out the nuts and store in a canister. If used infrequently, store nuts in the refrigerator.

Use as needed in recipes.

Toasting almonds or pine nuts right after you buy them means they keep better without refrigeration. Also one is less tempted to cook nuts in butter for garnish or when you need toasted nuts in a hurry.
