When buying swordfish steak, make sure the dark bits of the flesh are red, not brown, to ensure freshness. The dark bits are not good eating so there is a certain amount of waste, hence the generous quantity suggested.

Swordfish Baked in Lemon Butter

Heat oven to 350 degrees F. Rinse swordfish steak and pat dry with paper towel. Make sure any skin on the edge of the swordfish slice is removed and the remaining fat is scored.

In a flat baking dish, melt the butter. Stir in the grated peel, lemon juice, and salt. Place the swordfish slice in the dish, turning over once to make sure both sides are coated with the butter mixture. Bake, uncovered, in oven for 30 minutes, or until an internal temperature of 145 degrees F.
