These shrimp are sold with no heads, but the shells still on, where we live. They are already pink so it is impossible to tell if they are done by looking at them; be careful not to overcook them.

Maine Shrimp (Pandalus borealis)

Bring a large saucepan of salted water to the boil. Rinse the shrimp. Add to the pot of boiling water. Bring back up to the boil (this may take a while); then cook for about one minute. Drain and plunge into cold water for a minute to stop the cooking.

Meanwhile mix the mayonnaise with hot sauce.

Drain and serve shrimp with seasoned mayonnaise, crusty bread, and celery sticks.

Serves 2 for lunch
