Mix all ingredients, except the fish fillet(s) and salt and pepper, in a shallow baking dish large enough to hold the fillet(s) in a single layer.
Rinse off and skin the fish fillet(s).
Place the fish fillet(s) in baking dish and turn over in marinade to coat well on both sides. Let fish fillet(s) stand at room temperature for 30 minutes.
Meanwhile heat oven to 450 degrees F.
Sprinkle salt and pepper over the marinated fish. Bake fish for 10 to 15 minutes (10 minutes per inch thickness), until an internal temperature of 140 degrees F. Haddock is easily overcooked so be careful.
