Grind up the fennel seeds before blending with the other dried herbs. Mix all together and store in an airtight jar. Before using, rock the jar in your hands to to ensure the herbs are evenly mixed.
Yield: 16 grams, enough to fill a typical spice jar
The commercial version of Herbes de Provence is an aromatic blend of dried herbs: basil, fennel, lavender, summer savory, and thyme. Not liking the lavender component all that much, we modified the herb blend as above.http://macheads2.net/recipes/HerbesDeProvence.html
