Halibut with Bacon and Onion

Heat oven to 500 degrees F.

Flavor the milk with some salt. Dip the halibut in the salted milk, then crushed corn flakes. Place on rack to dry some.

Chop the bacon. Slice the onion thinly. Put bacon into a flat baking pan, with the sliced onion on top of the bacon. Heat until the bacon is mostly cooked. Place the halibut on top of the bed of bacon and onion. Grind on some salt. Dot the halibut with the butter. Bake for about 15 to 25 minutes, to a maximum internal temperature of 145 degrees F.

Serve with lemon wedges and Warm Tartar Sauce.
