BRAISED CUCUMBER

Peel the cucumber; cut in quarters and remove seeds. Cut into 1-inch chunks.

Melt butter in pot or pan with lid; stir in cucumber. Cover and cook over low heat for 5 minutes.

Stir in salt, lemon juice, and any mint. Cover and cook 2 minutes longer. When done, the cucumber should be translucent but firm.
