Heat oil in frying pan; cook onion and green pepper until soft, about 5 minutes.

Add tomatoes, salt, and pepper and cook for 10 minutes.

Rinse cod fillet. Place cod in a baking dish (with cover) big enough to hold it in a single layer.

Spread tomato/pepper mixture over cod fillet(s). Cover and cook in an 1100-watt microwave oven on HIGH (100% power) for 3 1/2 to 4 1/4 minutes (5.44 minutes per pound).

Let stand for 5 minutes before serving.

Serve over white rice.
