This dish is plain but tasty, so it is dependent on vegetable accompaniments to make it interesting.


Heat oven to 375 degrees F.

In a 1-quart baking dish, warm the oil. Whisk in the seasonings until blended. Add the chicken thighs and turn over in the oil mixture until thoroughly coated.

Cook in oven for 35 to 45 minutes, turning the thighs over halfway through cooking time.

Serves 2

Nice served on top of couscous or Couscous with Dried Cranberries & Pecans.
