Arctic Char in Lime

Cooking time for Arctic char fillet is about 12 minutes altogether. Skin the char fillet. Rinse well and dry with paper towel. Grate lime peel, or peel lime thinly and run the peel through a herb mill. Set aside.

Melt butter in frying pan (with cover). Add char fillet and crushed garlic. Cook 7 minutes.

Turn char fillet over and baste. Add salt, pepper, lime peel, and lime juice. Cook the second side for 5 minutes altogether. When 3 minutes is remaining on the timer, baste char and cover pan.
