Also known as witloof (white leaf). More correctly a chicory (Cichorium intybus), that is cultivated without sunlight to keep the leaves white and compact.
Trim the endive both ends; remove any wilted outer leaves. Slice coarsely crosswise. Dunk slices in a large pot of cool water. Drain and rinse until no grit remains. Spin endive dry in salad spinner. Make up the the salad dressing with the remaining ingredients. Toss endive with dressing. Serve in glass salad bowls.
