The ginger is to emphasize the sweetness of carrots and to counteract the cooked carrot taste which some find disagreeable.
Heat oven to 350 degrees F.
Cut up the trimmed carrots into sticks, or slice.
Melt the butter in a flat 1.5-quart baking dish. Stir in the salt and ginger. Toss the carrots in this mixture. Cover dish with a lid or aluminum foil, dull side out. Bake carrots for 1 hour or until tender.
